Baked Spinach

  • 1/2 onion, chopped
  • 1 c. half-and-half
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 6 tbsp. margarine, divided
  • 1/2 tsp. nutmeg
  • 2/3 c. Italian bread crumbs
  • 2 boxes frozen chopped spinach (10 oz.)

Preheat oven to 350 degrees F. Cook spinach according to package directions. Melt 4 tbsp. margarine in pan. Saute onions until cooked. Add half-and-half, salt, peppers, nutmeg and 1/3 cup bread crumbs. Mix well. Pour into greased 1-1/2 quart baking dish. Melt 2 tbsp. margarine in pan. Add 1/4 cup bread crumbs, mix well. Pour over spinach mixture. Bake 20 minutes or until crumbs are golden brown.

 

Chopped Salad

  • 1 c. onion, chopped
  • 1 c. tomato, chopped
  • 1 c. cucumber, chopped
  • 1 c. green pepper, chopped
  • 1 c. tart apple, chopped
  • 3 tsp. lemon juice
  • 1/3 c. olive oil
  • salt and pepper to taste

Mix chopped vegetables and apple in mixing bowl. Combine remaining ingredients and pour over vegetables and apple mix. Toss well and refrigerate to blend flavors.

 

French Onion Soup

  • 4 onions, thinly sliced
  • 1/4 c. dairy butter
  • 1 tbsp. flour
  • 6 beef bouillon cubes
  • 4 c. water
  • 1 tsp. Worcestershire sauce

Saute onions in butter until golden.Stir in flour. Add bouillon cubes, water and Worcestershire. Simmer for 20 minutes, stirring occasionally.

 

Banana-Berry Brownie Pizza

  • 20-oz. brownie mix
  • 1/3 c. boiling water
  • 1/4 c. vegetable oil
  • 2 eggs
  • 8 oz. cream cheese, softened
  • 1/4 c. sugar
  • 2 c. strawberries, sliced
  • 1 tsp. vanilla extract
  • 1-2 medium firm bananas, sliced
  • 1 oz. semisweet chocolate, melted

Combine brownie mix, water, oil and egg until blended. Spread in greased and floured 12-in pizza pan. Bake at 350 degrees F. for 25 minutes. Beat cream sheese, sugar, egg and vanilla until combined. Spread over brownie crust. Bake 15 minutes or until topping is set. Cool on wire rack. Before serving, arrange strawberries and bananas over topping; drizzle with chocolate.

 

Moroccan Chicken

  • 1 large zucchini, cubed
  • 1 c. chicken stock
  • 16 oz. garbanzo beans
  • 1/2 tbsp. olive oil
  • 1 can diced tomatoes
  • 1/2 tsp. cayenne
  • 1/2 tsp. ground cinnamon
  • 1 lb. boneless, skinless chicken thighs
  • 1 tsp. ground cumin

Heat oil in skillet over medium/high heat. Season chicken with salt and pepper and brown on either side. Add zucchini and cook until lightly browned. Add garbanzo beans, tomatoes, chicken stock, cayenne, cumin and cinnamon. Reduce heat and simmer until chicken is cooked thoroughly.
