Homemade Caramel Apples

Sweet and salty treats do the trick


1 cup of pecans, peanuts, almonds or

walnuts, chopped

12 medium-sized tart apples, washed and dried

12 popsicle sticks

2 cups brown sugar

1 cup light corn syrup

8 tbsp butter

1 can (15 oz.) sweetened condensed milk

1 tsp. vanilla


Lay out a large sheet of wax paper. Sprinkle the nuts onto it to be ready to set apples on after dipping. Stick popsicle sticks into tops of apples. Set apples aside. In a saucepan combine sugar, syrup and butter. Bring to a boil over medium heat, stirring constantly. Stir in the milk slowly so as not to stop the boiling. Continue to stir constantly until the mixture reaches 235 degrees/"softball" stage. Remove from heat and stir in vanilla. Allow the carmel to cool (about 5 to 7 minutes), stirring constantly, then dip apples in caramel (you'll probably have to tip the saucepan almost onto its side to fully cover the apples). Set the coated applies into the nuts on the wax paper, then allow to cool. You can sprinkle more chopped nuts on the apples after dipping, and/or sprinkle other toppings like coconut, crushed chocolate cookies, etc. If giving as gifts, you can really jazz them up by drizzling melted chocolate over the apples after they've set.
