Fish Tacos

A catch-of-the-day dinner


1 lb. fish, cleaned and deboned

1 tbsp. butter

1 tsp. Cajun seasoning

Red onion, diced

Avocado, sliced

Mango, cubed

Cilantro, chopped

1 lime, quartered

Corn tortillas


Melt butter in a large skillet. Add fish and half of the seasoning. Prepare fruits and vegetables as fresh toppings. Flip the browned fish over and season the other side with remaining seasoning. Chop the fish into bite-sized pieces with a spatula. Continue cooking the fish until golden and cooked through. Fill the corn tortillas with a serving of fish and toppings. Serve warm with fresh lime for dressing.
